I use the Windows version.
How can I customize the dictionary bar in order to show only the dictionaries that have the searched term?
I used to have that and the dictionaries were also aligned to the left side of the window, but after I formatted my machine I have not succeeded in configuring it that way.

Try "View -> Results Navigation Pane" in Menu, that should restore the lists of dictionaries with the found entry.

The View menu gives:
Zoom
Search Pane
Dictionary Bar
Navigation
Show names in Dictionary Bar

Choosing Navigation or not does not make any difference at all.

Note: previously I was using Windows 7 32, and I have moved to 64. Does that explain?

I think you are using the old version where such feature was not yet implemented. Try one of the recent builds:
